Responding to a new code that requires restaurants to have staff trained in food protection, the University of New Hampshire Cooperative Extension is offering food-safety classes taught in Spanish and Mandarin Chinese.
“A while ago we did a survey of health inspectors in the state and local jurisdictions asking them what languages they felt were needed. These were the top two,” said Mary Saucier Choate, a food safety field specialist in the Grafton County Extension Offices.
The training class and certification exam known as ServSafe has been offered in English throughout the state for two decades. The idea of expanding it to other languages came up when the state adopted the 2017 USDA Food Code into its Rules for the Sanitary Production and Distribution of Food, raising the need for restaurants to have somebody on staff at all times who has a certificate in food protection.
The restaurant industry has traditionally been an employer of immigrants, some of whom may not speak English well enough to take a course. Offering ServSafe in other languages was the logical next step, Choate said.
“We see a need, and the results are that we get safer food,” she said.
The U.S. Census Bureau estimates that 3.9% of New Hampshire residents are Hispanic or Latino, categories that cover a large number of Spanish- and Portuguese-speaking nations, and 3% are Asian, which includes many nationalities other than Chinese. It also estimates that 7.8% of New Hampshire residents over the age of 5 speak some language other than English at home.
The choice of Mandarin Chinese as one of the ServSafe languages may reflect the popularity of Chinese restaurants, which have long been a staple in America.
“Think about how many there are,” Choate said. “I live in little Woodsville, and there’s two Chinese restaurants!”
The two foreign-language ServSafe classes are offered in Manchester. Mandarin Chinese is on Jan. 14, and Spanish on Feb. 20. Registration for the Mandarin class is required by Dec. 26, so participants can receive and study the ServSafe manual before the class.
